I had the lovely opportunity to peek into The Phoenix Supper Club’s makeshift kitchen in the basement of the Meridian art gallery.

From organic sous-vide chicken to candied bacon to parsley coulis…

… to caramelized cipollini onions and mushrooms, I was in heaven gazing upon the vast variety of ingredients going into today’s degustation.

The pace picked up as we went deeper into the night. Chef Tommy and his crew were focused on the plating of the dishes and perfecting the masterpieces the patrons were long-awaiting.
